Veg Biryani

Ingredients

    Rice
    • 8 cups Water
    • 2 Bay Leaf / Tej Patta
    • 1 inch Cinnamon stick
    • 5 Cloves
    • 1 Star Anise
    • ½ tsp Pepper
    • ½ tsp Pepper
    • 1 tsp Salt
    • 1tsp Jeera
    • 1½ cup Basmati Rice (soaked for 20 minutes)
    For Biryani Gravy:
    • 2 tbsp Oil
    • 1 tbsp Ghee
    • 1 Tej Patta
    • 2 inch Cinnamon stick
    • 2 Cloves
    • 1 Star Anise
    • 1 tsp Shah Jeera
    • 2 Cardamom
    • 1 tsp Ginger-Garlic paste
    • 2 cups mixed vegetables (Carrot, Gobi, Peas, Potato, Beans, chopped, Mushroom,boiled Soyabean chunk ,Bell Paper)
    • 1 cup Curd
    • 1 tsp Kashmiri Red Chilli Powder
    • ½ tsp Turmeric / Haldi
    • 2 tsp Biryani Masala powder
    • 1 tsp Salt
    • 1 cup Water
    • 19 cubes Paneer grilled
    • 12 piece fried Kaju
    Other Ingredients:
    • ¼ cup Mint / Pudina (chopped)
    • ¼ cup Coriander (chopped)
    • 1 tbsp Ghee
    • ½ cup fried Onion
    • ¼ cup Saffron Water
    • pinch of Biryani Masala powder
    • Wheat dough (to seal)

Method / Process

  • For boiled Rice
  • Firstly, in a large vessel boil 8 cups Water along with 2 Bay Leaf, 1 inch Cinnamon stick, 5 Cloves, 1 Star Anise, ½ tsp Pepper, 2 tsp Oil,1 tsp Jelelra and 1 tsp Salt.
  • Now add 1½ cup Basmati Rice, soaked for 20 minutes. Stir well.
  • Further boil for 10 minutes or till the Rice is almost cooked. (do not cook the Rice completely, as it will get cooked in dum while preparing biryani)
  • Drain off the Water and rinse with cold Water to stop cooking process.
  • Vegetable Marination
  • In large bowl add 1 cup hang Curd, 2 tsp Oil,1 tsp Chilli powder, ½ tsp Turmeric, 2 tsp Biryani Masala,1 tsp Black Jeera powder, 1 tsp Salt and 1tsp Ginger Garlic paste.
  • Furthermore add 2 cups mixed vegetables (Carrot, Gobi, Peas, Potato, Beans,Bell Paper, 10 piece boiled Soya chunk,Pudina Leaves ,Dhania leaves mix with spoon .
  • Recipe of Biryani gravy
  • Firstly, in a large kadai heat 2 tbsp Oil and 1 tsp Ghee.
  • Further add 1 Bay Leaf, 2 inch Cinnamon Stick,2 tsp Cloves, 1 Star Anise, 4 Cardamom,. Saute till the spices turn aromatic
  • Add small amount of fried Onion and marinated vegetables and saute for 2 minutes. Saute on low flame
  • Further add 1 cup Water. Cover and cook for 15 minutes.
  • Finally Biryani gravy is ready.
  • Assembling / layering veg dum Biryani recipe: Firstly, in a thick bottomed deep vessel spread in a layer of prepared Biryani gravy.
  • Further layer with cooked Rice.
  • Also spread few chopped Mint, Coriander, Grilled Paneer ,fried Onions and Saffron Water.
  • Now close the lid and seal with Wheat dough.
  • Keeping the flame on low, cook for 15 minutes or till the Rice and Vegetables get completely cooked in presence of steam or dum.
  • Finally Veg Dum Biryani serve with Raita.
